FARE Tested recipes of local favorites BAR-B-Q CHICKEN PIZZA WITH CARAMELIZED ONIONS
Bake pizza crust according to package directions. Mix pizza sauce and barbecue sauce in bowl and set aside. Place olive oil in skillet on medium heat. Add diced chicken, salt and pepper and cook until chicken is done, about 4 to 5 minutes. Set chicken aside and cook onions in pan drippings for 3 minutes. Add vinegar and brown sugar and simmer for 5 minutes on low/medium heat. Return chicken to skillet and cook for an additional minute. Once pizza crust is baked, place sauce mixture over pizza crust. Place mozzarella cheese over sauce and add chicken/onion mixture on top of the cheese. Bake at 350¡ for 11 minutes. Makes 4 servings.
VEGETABLE STRATA
In a baking dish coated with olive oil, cover bottom with slices of zucchini. Sprinkle with salt, pepper and oregano. Arrange tomato slices on top and cover completely. Sprinkle with salt, pepper and oregano. Add the sliced onions and sprinkle with mozzarella cheese. Arrange the strips of bacon over entire pan. Bake for 45 minutes to 1 hour.
SUMMER FRUIT SMOOTHIE
Put all the ingredients in a blender and mix for about 20 to 30 seconds. Makes 3 servings. *We use the Bluebonnet French vanilla soy protein powder. It has by far the best taste of any powder we have tried. |
